- Prepare of Mojito syrup.
- Prepare of zest and juice of 1 whole lime.
- It’s of water.
- It’s of caster sugar.
- It’s of chopped mint, divided.
- Prepare of rum.
- Prepare of mango, peeled and sliced.
- You need of pineapple, peeled, cored and sliced.
- You need of strawberries, hulled and halved.

- Put the lime juice, zest, water and sugar in a small saucepan and bring to the boil. Add most of the chopped mint then take off the heat and let cool.
- When cooled, strain the mint off and stir in the rum.
- Lay the mixed fruit nicely on each plate, drizzle the mojito syrup over and garnish with the remaining chopped mint.
